I'd also add that there are aspects of roaming profiles which are incompatible between Vista and XP, and two different profiles will be kept. Desktop shortcuts, in particular, added on one system will not appear on the other.
I've not yet had enough experience to know which, if any, profile data is copied between them. Generally, it's a one-off migration from XP to Vista, I don't know how many people actually roam between them on a long-term basis.
