New hard disks for SBS 2003. Urgent question

Hello Everyone
I have recently taken over the support of an SBS 2003 server. The
server is configured as the DC, Exchange & VPN.
The problem is that when I had a good look at the box it turns out
that the person who built it decided 1 IDE disk was enough!
I have know been given 2 new drives to insert & mirror to give the
server some redundancy but its not as easy as that, they would like
the whole server to almost be rebuilt and not just stick the disk in
as another logical drive and move all the important info across to it.
(Exchange DB's, etc)
Does anyone have any suggestions as to what I can do? Any help would
be much appreciated and if you need more info let me know.
