Chris, I dont agree with the blanket statement "You cannot, however,
add a SBS server of any version to an existing SBS domain...it will
just fail."
The technet article "Migrating Windows Small Business Server 2003 to
New Hardware" completely endorses installing a 2nd SBS server in the
same domain as your existing SBS server for upgrade purposes (albeit 2
2003 SBS servers, but still). The biggest gotcha is "You have seven
days from when you join the destination server to the domain before
the source server must be demoted."
Either way I think I am going to try the swing method, the biggest
benefit I see here is that I can keep the same server name - I cant
think of any reason why this would be required in my configuration but
chances are there are some that I am forgetting that will cause
headaches down the road. Even more than the name issue is the ability
to do a lot of work at a leisurely pace remotely from my clients
office.

If you had a standard Windows Server domain (NOT SBS) then your approach works and there is actually a white paper on that approach on the SBS website.

You have three choices,
1. ADMT
2. Swing Migration
3. Develop your own
I strongly encourage you to search this ng for the testimonials on using the swing migration method and save yourself the nightmare
