Yes, this is what I want to do. Users will use Outlook 2007 installed on SBS
through an Applications Publishing Server (2X product) which uses Terminal
Services. And the mail will be stored in Exchange, also on SBS. I hold a
volume license for Office 2007 so licensing is ok to operate in this way.
I do not plan to install Outlook 2003 on each client, which comes with SBS.

From your description, I think you want to setup a Terminal Server, and
install Office 2007 on the Terminal Server. Then, the users will logon the
Terminal Server and use the Outlook 2007 to connect the Exchange.
If this is what you want to do, I think there is no any issue for the
Outlook and Exchange. The every user who logon Terminal Server will has one
windows user profile and separate Outlook profile. They will work all fine.
Note: To install Office on Terminal Server, you need a license exists for
each user who will run any of the Office 2007 programs on the Terminal
Server. For detail steps, please refer to the following KB:
