SBS External Backup + Schedule

Sorry, but another SBS question.
The server is sut up with 2 x 500 GB drived in RAID 1 formation.
The most important data is on Sage which is backed up to a small USB
pend drive each evening and taken off site.
How shoud I go about getting the server backed up in the event of a
disaster, fire etc.
I was thinking of purchasing 2 x 500 GB external USB hard drives and
using these.
Setting up the SBS backup to run each morning at around 3am when the
system will not be used.
I would back up to 1 of the drives first. Then every other day swap
the drives over so that there would be no more that an days work
lost. Would recommend that it is done every day but cannot guarantee
the the users will do this.
Shoudl I do a full backup each time, or would an incremental be good
enough?
Any recomendeations on if I should do the whole server, or just key
files?
The server is set up so that the O/S is on the 'C' drive and the users
'my documents' on the 'E' drive.
Not sure where the users email and other accounts are.
