Pop3 to Exchange

I am planning a migration to SBS Exchange from Pop3. How do I handle the Outlook Client's existing PST files? Do I just add the name of the exchange server in the Outlook Account Settings then remove the Pop settings and be done. One thing that is very important is that I maintain the user's inbox and sent items.

I am not looking forward to creating a new PST file since some people have 1gb and better pst files and importing sometimes takes a while.

Also, people use different computers on different days and they don't want them to use OWA, so if they go from computer to comptuer will their Outlook pst follow them around to different PC's?

Thanks
JB
