Make sure you have added the cert on the sbs server to your trust root authorities on the client laptop.
This used to cause me a few issues... got my head around it in the end

VPN to the office is the slowest connection you can have for Outlook and frequently hangs
Outlook over HTTP is the only way to go and you don't have to change settings between the office and home...it can connect via that method both in and out of the office.

Configure her Outlook to access the server over HTTP. You don't need any
additional ports open for that to work. You also don't need VPN.
Connect to RWW and click on the link "use outlook over the internet". You
will find a detailed instruction that has been customized for your SBS
setup.
