Hi Scott,
Thanks for posting in our newsgroup and also for Costas's input.
After the older employee leaves, you can delete his account, his mailbox
will be in unconnected state. When the new users comes, you can reconnect
the older mail to new users.
Step 1: Delete the older mailbox.
1. On SBS 2003, launch Active Directory Users and Computers.
2. In the Users Container, right click the older user. Click Exchange Task.
3. Click Delete Mailbox and click Next to finish the process.
4. Click Next and Finish.
Step 2: Delete the user account.
Step 3: When the new employ comes, create new user account with the Add
User Wizard.
Step 4: The mailbox will be created automatically for new employee, please
delete the mailbox.
1. On SBS 2003, launch Active Directory Users and Computers.

3. Click Delete Mailbox and click Next to finish the process.
4. Click Next and Finish.
Step 5: Reconnect the older mailbox to new user.
1. Click Start, point to Programs, point to Microsoft Exchange, and then
click System Manager.
2. Expand Administrative Groups, and then expand AdministrativeGroupName.
3. Expand Servers, expand ServerName, and then expand StorageGroupName.
4. Expand Mailbox Store, right-click Mailboxes, and then click Run Cleanup
Agent.
5. Right-click the older mailbox that you want to recover, and then click
Reconnect.
6. In the list of Active Directory accounts that appear, click the new user
account that you want the mailbox to connect to, and then click OK.
7. Quit Exchange System Manager.
