After restoration from the backup, did you rerun the "eseutil/mh" command?
Please give me the screen shot of the output and the MPS Report for deep
research.

You have new e-mails newer than the Wednesday backup, a suggestion is to
export the e-mails to pst file. After the problem is resolved and the store
can be mounted, we can import the files to Exchange again. In this way you
will not lose new e-mails.
