You might want to write a batch file to delete the directories just before you run the command line utility. You can have 5 directories, one for each day of the week and create the batch file runs as a task (different task for each day) and schedule it to run every day. The batch file can delete the directory and then run the stsadm.exe utility

The version 2.0 is for WSS 2.0 (companyweb). This isn't the one you want. I posted that just to make sure you don't run the wrong one. As far as having multiple copies, I'm not aware of any way to reduce the number of backups. You can manually delete the directories if you get to have too many of them. But as a backup process, this is the one that will restore everything if the server crashes.

If you don't have documents in the site , I would delete the site and try to restore it from the backup. If you have documents already try restoring it to a different site. One thing to keep in mind, is that by using the '-filename' switch you basically back up the site collection only, not the farm.

One last thing... make sure you run stsadm from the '\Program Files\Common Files\Microsoft Shared\Web Server Extensions\12' directory, because there is another stsadm.exe application in the '.....\60' directory which is the one for version 2.0

That will work but I would do two things. First I will test it to make sure it restores, and then I'll have a couple of batch jobs to make sure that I keep at least two backups for the 'just in case' scenario.
