I have then tried running "adprep /forestprep" on the SBS box, which
runs successfully saying "Forest-wide information has already been
updated"
What am i doing wrong?
If your additional DC is already R2, then you need to update the schema
(V31) using the *second* CD of the R2 set on the SBS server.
