One of the commercial partition managers ought to resize an XP installation safely, probably even the older versions given away on magazines. If you're prepared to reformat anyway, you certainly won't lose anything by trying.
I haven't actually run a 2003-generation server dual boot, but I don't think there should be a problem. They still use the NT-type boot system, and an installation should just add an entry to the XP boot menu. None of the Windows variants from 95 onward insisted on installation on the first bootable partition they recognised, they just needed to place a few files there.
Or you could use a virtual machine in XP.
