When you say that all the users were Admins and ' it won't let you copy that', what do you mean? Do you get any kind of error and if yes, what is that error? I'm not aware of any issues for transferring profiles for local Admins? If the profile is private, then yes, there are steps you need to take to solve the problem but at the end you should be able to transfer the profiles

Thanks for the help, I did use the Connectcomputer wizard. It has a spot
where you can copy a user's profile. All my users are admins, and it won't
let you copy that. I get a generic desktop, no Outlook Express info (inbox
messages, addresses everything is overwritten.) I can go back and get the
original desktop/Outlook but not with a domain login.
When setting up the clients in the User Setup Wizard, I only checked the SBS
client package box, and I went into Advanced and unchecked everything to try
and get it to not overwrite the Desktop and Outlook Express. Again, no help.
Thanks for your help.

Did you use the 'ConnectComputer' wizard to add the workstations to the
domain? If you did, when you add users to the computer you can select which
of the current profile to assign to a user, which will migrate the profile
to the new, domain user account
