The SBSBackup configuration script has been maligned by many for it's lack of customization and it's all or nothing approach.
Truth is, if you don't purposely try to break it to work around issues that themselve should be addressed (i.e. sufficient backup capacity) - you can restore your server from it :-).
I used BE prior to SBS 2k3.

We're using Backup Exec, and to get the system state, you have to drill into
"Shadow Copy Components" and select the system and services state. I didn't
do that. :-(
Ah, sorry, yea, that's true, but, I bet you don't miss it again :(
