I have had experience using "online" backup solutions, but I will agree with Chris and Teneo that I would not use it to backup the entire server. I currently use Global Data Vault, they have servers in Dallas, Texas and somewhere in the UK. Both sites are mirrored so your backup is copied to both locations. I currently use it to only backup some of our financial files (less the 1Gb). They use a piece of software on your machine and use 448 bit encryption to upload the files (initial file upload can take a while depending on your connection speed and or volume of files to be uploaded). You can also set up a schedule for after hours. After initial upload, only incremental changes are uploaded reducing the time it takes. Typically, my nightly upload takes a few minutes. They keep up to 30 days worth of backups and you do not need to figure out which incremental backups are needed to restore a file, you just choose the version/date of the file/s you want and click on restore.
I also use a USB hard drive to backup the entire server every night, including the system state and the online backup for just our financial records. It all really boils down to what your needs are and how to best accomplish those goals. Hope this helps.

I've told all my client's no when they approach it...upload bandwidth is a killer here in the US

This is kind of why I am asking for tips and strategies, e.g. software that
that works on differencing and would also work for exchange.

A lot quicker than the backup tapes that got burnt in the fire in the server
room! Realistically we could retrieve a 35GB file in about 3 hours if
needed.
