I have disabled all roaming profiles, and have one user to test with the
roaming profile and my document redirection.

I went with option #2

C:\users & C:\userprofiles

Profile path is

\\server\UserProfiles\STARSADMIN

My doc redirection is to the default location ( see attached picture)

Doc's are redirected to:

\\server\Users\STARSADMIN\My Documents

Desktop is redirected to (via gpo)

\\server\Users\STARSADMIN\Desktop

One thing I am curious about for roaming profiles is: Do you have to
specify the exact user folder or will the system create the users folder?

So far all the documents ( just 1 ) and desktop items ( 1 item as well)
have successfully redirected, and not disappeared. I have logged this user
on 4 different computers (the client computers that were having the
problems)

Another user docs disappeared today, so I went onto the server, and deleted
every profile stored on it.

Could you tell me the proper permissions to set for both the profile and
document folders?

For example a domain power user can successfully browse the network to the
admin's document folder and read everything even though only domain admins,
the user in question, sbs folder operators, system, and creator owner are
the only users listed under security. I think something may have changed
due to both docs and profiles being stored to 1 location.
