The other issue is that your mailbox store is 18GB and you say you have no service Packs applied
You need to get SBS SP1 and Exchange SP2 at a minimum and read up on how to have a larger mailbox store or Exchange is going to crap out

You have a backup of 310GB on top of your Information store. Backing up huge
stuff like that to a USB will take time. You can shorten the time by using
an external drive with FireWire. But even writing that kind of backup to a
fast SCSI would take a considerable amount of time.
