the other IT techi have been left scratching our heads as to why,

You do not need ipx/spx as a protocol on the server unless you are
running Netware.
Can the server see the workstation by Start Run
\\remoteworkstationname ?
Note that the pptp vpn is as fast as the slowest connection. If you
have a typical US adsl the fastest connection might be 512k or less.
Backups over that slow connection are not going to work very well.
Do the laptops stay turned on at night when the backups occur? Many
laptops have their power saving settings set to go to sleep after a
few hours.
Remote users typically do not show up in network neighborhood.

PLEASE REMEBER THAT: the users CAN log into exchange and receive
emails and also obtain files of the server, WITHOUT using a VPN

have the remote office workstations using the SBS at the main office
for dns.
route add -p remotenetwork mask gateway
route add -p 192.168.1.0 mask 255.255.255.0 192.168.16.1 assuming that
your linux router is at 192.168.16.1
I think Larry mentioned ipconfig/all >c:\serveripconfig.txt and
ipconfig/all >C:\remoteworkstationipconfig.txt to give some more
clues.
