SBS 2K3 R2 and Outlook

Setup a new server with SBS 2K3 R2 for a client. Allowed server to fully
update on Microsoft update. Connected computers to server. Discovered that
the work stations actually set up complete account (including Outlook email)
on each wok station for the user, as opposed to my importing Outlook email,
contacts, etc., the desktop, and documents, as was done in the past.
However, I discovered that the contacts were not imported to Outlook nor
were the additional folders that the client had set up to sort email.
Further, I found that the setup cleansed the Documents and settings folder,
removing all Outlook files except for the new .pst file it set up (which is
quite large).
Noticed, that when clicking to start a new email and clicking on 'TO' and
entering a letter, all of the client contacts beginning with the typed
letter appear to choose from. How do I get all of these email addresses
from the PST file in to contacts? And where do I find the additional
folders that the client had?
