Backup and recovery strategy for SBS 2003.

Hi,

I support an SBS server that has a C: and a D: drive. Those two drives
are both mirrored across two dynamic disks using the Windows software
RAID. Each night, we run a full backup using the SBS ntbackup utility
and this backup file (it only comes to about 10gb) is then copied over
to a USB hard disk which is then stored off-site. The full backup
includes the system state, Exchange data, and all drives.

I would like to know if people think this is sufficient. My concerns
are:-

- I have read that ntbackup will not back up open files so I am
concerned that when it comes to doing a restore, I might find that I
don't have certain system files that are open continuously.
- Will I have to install SBS and set up the software RAID before I can
do a restore? Or can I restore onto a single basic disk?
- Is there anything I've not thought of?

I'd really appreciate some advice on this.
