I read the pdf completely. Your pdf goes about creating a what the guys
calls a dummy web site. I followed to a tee

You won't use anything.local on your SSL cert.

My email and internet domain is not xxxxxxxIncorporated.com.

That doesn't matter....but you sure chose a long/unwieldy internal
DNS name to type in! :)

Emails are working fine and everything is
great. My internet domain is registered with a different provider
which directs my emails to my Exchange server DSL Static IP address.
(maybe I explained that right)

I'm presuming you mean, your public domain's email is hosted
directly on your Exchange server via SMTP (this is a Good Thing) and
has an MX record that specifies an A record pointing at your public
IP.

When I check my mail with Outlook Web
Access. The address is https://xxxxx01.xxxxxxtexts.com/remote.
What I need to know is what address do I need to setup the SSL
Certificate with and how can I find out if I have one on the server
already?

If you set up a self-signed cert when you installed SBS, you do have
one already (as you say you're using OWA with SSL, that's clearly
the case).
