That's probably due to the Dell Hidden Partition now becoming visible to the system, so the boot partition is wrong.
You should check the partitions, also that the right one is the "Active" partition, and if you can boot from a Bart Disk or similar check the Boot ..ini and if necessary, adjust it. It may save you some pain, but as I say I eventually cut my losses and went the Backup/restore route.
It's not good that your never had a successful Backup.... That's a disaster waiting to happen and should have been resolved long ago as a matter of high priority.

But the thing is I did try this process in the order you guys are
telling but it still fails after the restart and gives ntoskrnl.exe
missing or corrupted,
Yet i couldnt try the install it with Dell CDs because i dont have
them, Dell didnt send any specific CD for it, and i have the full
SBS2003 CDs, (I think 4 CDs in total, I'm not at work right now, so I
cannot check)
And neither ASR nor the full backup restores ever worked. Now i'll
have to sacrifice from my own time to find out the problem, I'm
getting a copy of full backup i did last night and i'll try this out
at home to find out more about it.
I checked the Norton Ghost Enterprise Edition, and it seems good, I
used Ghost for so many times for client's workstations but never tried
with the server, i think i'm going to try that too, I'll of course do
a full backup before I try anything like this.
Once again thanks for your input everyone, you guys have been so
helpful.

Once you've configured your RAID on the New Disks do the initial build from
the Dell OEM Install disks, that will recreate their hidden partition again
and save any hassles with BIOS lock on the install Key.
I initially restored to the same ( but now larger ) partitions.
I then moved data into more appropriate locations as required.
eg
In this case as I had no second set of spindles/RAID I set up 4 Partitions
C:\ 25 GB ( System ) ( minimum Swapfile - Moe if you have more LOB Apps )
D:\ 160 GB ( Data - SQL (and other) Databases - roaming profiles )
E:\ 40 GB ( Exchange - 2x max Expected DB Size in 18months + 10% )
F:\ 25 GB ( Files - Larger Swapfile - Temp Files - ClientApps - Install
Files etc..- bigger if you have more "junk" )
Then follow:
Moving Data Folders for Windows Small Business Server 2003http://www.microsoft.com/technet/prodtechnol/sbs/2003/maintain/moveda...
Plus any documentation relating to LOB Apps Data location.
If the logs are clean and everything is working Grab an Image, or a Full SBS
Backup, for archival purposes and store it with an ASR Backup.
This is the first of your "Known Good" points.
