First, in order to keep things working you should always use the Wizard to
change the server LAN IP.
Second, having 2 LAN NICs will create problems.
What are you trying to achieve?

I've just installed SBS2003-R2 + Server2003-SP2 onto a new new server.
I have an external firewall/router, and am NOT using SBS as the gateway
for
the LAN clients. I think i might have answered a question during the SBS
setup wrong - where it asks you about allocating a network card for LAN,
and
one for internet.
Now, I can set ONE or the OTHER of my two network interface settings to
manual (static IP), but not the other - if i try to change the other, the
first reverts to DHCP. Even more strangely, once I set one to manual, if
i
go straight back into it, its settings *appear* to have been set back to
DHCP, even though the it's 'Status' still reports it as manually
configured.
This is NOT what I want! I need both set manually for LAN client access
(yes I know Windows/SBS is only intended for 1 LAN client NIC, but I've
worked this way fine for 7 years, including the previous incarnation of
SBS2003 on the old server), and I've never seen NICs behave like this.
