You'll have to restart and let the system come up to complete the
install, then restart again and go into the Recovery Console. From
there you can remove the Service Pack.

There is no such thing as RECOVERY CONSOLE in Windows 2003 Server of
any kind. After rebooting, you will need to go to ADD/REMOVE programs
to remove SP2. Please be aware that there could be some issues with
your system after doing so. The other option is to restore your
system drive backup since any good system administrator would have
made a full system backup just before applying the Service Pack anyway.
