Does this mean you have a A record and a MX record already out there? Given
that you only deal with 5 users, I would start Exchange without POP3
connector download their emails into their current PST folders, and upload
their mail into their mailboxes. After you have verified that email is
flowing ok, remove their POP3 accounts on their Outlook profile.
As to Outlook, I would upgrade to 2003. If you use "connectcomputer" to join
the workstations, you can select the users' current profile and all
settings - including the current POP3 in Outlook will be brought over.

Installing SBS 2003 R2 today. Will be connecting 5 pc's that already have
Outlook 2002 installed on them and have been using individual pop e-mail
accounts. SBS comes with Outlook 2003. Account will have company email set
up
using exchange. Company domain will have records to forward e-mails to
static
IP of SBS box. Would I uninstall existing Outlook so I do not have
multiple
folders or leave it installed and do not have the server install it when
it
connects. I need to use the pop 3 connector for a while to update
customers
on the new e-mail.
