Email Problems with SBS and Server 2003

Hello!
I'm new on this exchange and SBS stuff.
The thing is, I have an company account (allocated in a server) and in our
company we have exchange server running,
The problem is that I'll be out for about 3 months and I want to be able to
read and write emails as ever did.
I already configured Outlook to leave message on server, so exchage can copy
a message to server (so when I arrive I'll have it all back), but there's a
problem.
What I mean is, if i'm faster then exchange (15 mins) I'll get email and
exchange too. If exchange goes first, it removes my emails from server and I
simply cant access to them.
What can I do to make it work? Can I configure SMB or exchage to leave a copy
on server for all emails sent and recieved from my account?
Shall I access to exchage server over the internet instead of pop3? Do I need
a VPN to do that?
