Whoever is the registrar for your Domain not necessarily your ISP or Web Hosting company either one controls the A and MX records for your Domain. You need to setup an A record pointing to the IP address for your server. Since you have a web site at FQDN I would have the A record at mail.FQDN Then st an MX record pointing to mail.FQDN when you are ready to transfer to your Exchange server at a priority of a lower number than the MX record that exists at your hosting company now.. This will allow for mail to flow to either source until propagation is complete worldwide and you can shutoff the Hosting MX. Be sure you advise the Tech support for the Registrar and hosting companies what you are doing.

I initially have been using a POP3 connector to pull my email from the server
at my hosting company. Now that I have been running SBS 2003 for a month or
so and feel comfortable with the basics, I would like to start routing email
for my domain directly to Exchange and bypass the hosting company.
I use a 3rd party hosting company to host my site (not my ISP). How do I
set it up so that my email is sent to my exchange server, but my web address
is still routed to the hosting company's server?
Is this a change I need to request from the hosting company? I have the
ability to change the name servers, but there isn't anywhere to change the
MXservers. I am close to renewing my hosting agreement, so if there is some
special feature I should be looking for, I would like to do it now before I
make a switch.
