If you want more comprehensive monitoring, consider monitoring
software that runs at the workstation level. You can record user
activity, keystroke, print actions, file copies, logins, application
activity, and screen shots.
There are some consumer-grade applications for $50-100, but only work
on one workstation. There is a commercial-grade product available
that tracks users on all computers, sorts by user or workstation, and
has configurable alerts and allow/deny rules for certain types of
traffic.
This is not just for malicious activity. It can be used for tracking
login/logout times, workstation hopping, productivity, IM & web
browsing, applications usage, troubleshooting software crashes, or
finding introdution of malware.

If you go the route of monitoring software then do be aware of moral and
legal implications. Ensure that you have the full support of HR and/or the
MD and preferably have something in writing to that effect (company policy
might do if it covers monitoring). Basically, if it all goes pear shaped and
goes to an industrial tribunal and it turns out that there were legal
implications of monitoring then be careful that its not your head on the
block.
