1a. I understnad that just an MX record pointed to the IP is not best
practice. An A record is needed for SPAM filters to authenticate the
server (Need help with this)

It's not just for spam filters - the RFCs state that you must not use an IP
address.
Ask whomever hosts your domain's public DNS to create the A recordfor you
....as in, mail.yourdomain.com

2. I want to connect to OWA, Sharepoint, and Remote Web Workplace
via the SSL connection: https://mydomain.com/remote etc.)

OK; if you don't want to use https://something.domain.com/remote, make sure
that yourdomain.com itself points to the right public IP for your network.
However, if you have a public website somewhere, you probably don't want to
do that - external visitors may not always put the www in front.

3. By changing the @ host record no traffice is routed to
www.mydomain.com.

Eh? Sorry, don't understand....


4. Would really like sub domains like http://webmail.mydomain.com
that forwards to https://mydomain.com/exchange.

That's not a function of DNS. Check out
http://msmvps.com/blogs/javier/archive/2005/06/03/50410.aspx for some
options.
