You don't say how many workstations, but for more than about 5 I would vote
for a swing. If you are not already familiar with the procedure, it will
take some time and effort to perfiect it, but in the mean time nothing is
lost. You will need a temporary DC. But the time saved by not having to
visit every workstation and migrate profiles around after rejoing the domain
is valuable indeed.
You did not say how the drives were configured, but in addition to a verifed
and tested backup, I would like to see a copy of the system drive, say from
a broken mirror, on the shelf. Then if things go south you can plug in the
proven good mirrored drive at 0630 Monday AM, just in time for the users to
come back to work.... :-).
Drives are so cheap, that I would break the mirror, re mirror, test booting
from the "spare" drive, and then work on one set while the other stays on
the shelf. In the end, the "new" drive could be used for something else.

Yeah, I think you may have a problem with IIS Metadirectory since it's
part of the System State backup. The only other ways that I can think of
at the moment are:
1. Do a swing migration (essentially a half-swing): www.sbsmigration.com
2. Uninstall IIS and Exchange and then do a reinstall of these (and any
other apps like AV software that might depend on IIS). There used to be
an MS KB article (887305) that detailed this but I see it's been pulled
from the knowledgebase. I've attached a .pdf copy of it to this post (not
sure if it will make it through the filters).
A full backup (including Exchange databases) would be necessary in either
case.

Merv, thanks for the reply.
By foobared I mean the previous company screwed with the IIS
permissions so much it FOOBARED Sharepoint, OMA, OWA etc, and we want
it back to a clean slate. I want no part of the old IIS install or the
Sharepoint Install.
So be doing this procedure I will get the users and exhange back, wont
system state restore the IIS settings as well?
This is what I am trying to avoid.
Also please clarrify on the backup, should I backup the system state,
the info store and the drive the Exhchage database is located. Or for
safety's sake do a complete backup of the c drvive and the d drive to
make sure I grab everything.
