As far as I'm concerned, when you encounter an issue - or are likely to encounter one - that SP2 resolves, that's the time to install it.
I really feel for the folks that use Windows Update, Microsoft Update, or native WSUS. SP2 is pushed in a way that the non-informed user believes it should be installed immediately. If you're not paying attention, you could run into an unnessecary business disruption.
Using SBS Update services means your server(s) are not configured to auto-install by default, so you have the opportunity to simply decline the update for now, and then approve it at some later date.
SBS Update services is a feature of SBS 2003 R2, and IMHO the price of the upgrade is worth it for this feature.

Hello...
I honestly wasn't aware that there was a new service pack available until I
noticed some posts regarding it in Susan B's blog. How important is it to
load the new service pack? My server is running fine and I've noticed that
there seem to be issues with the update. Don't have the time right now to
troubleshoot potential system problems post SP. Just wondering if this should
be put on the back burner or should I schedule a time to load.
