Hi Simon, by default at setup, MX record is at ISP / Domain host.
All the work is done by the ISP then, you just tell them when they
scanned it send it onto your IP... dont think you will get any assistance
though, they will say collect it by pop3.
Why you concerned about opening your IP for SMTP... no hacker can get in
that door, port 25 wil only accept email requests. Just have to ensure you
are not an open relay
Email communications are standard industry, you cant have your own
system..Ports 25 and 110 (ssl are on different) Unless ISP has facility to
utilise other ports, cant see where this will work.
Im trying to understand your logic, is there something you have done in
the past for this to work ?

Mail delivered to your ISP, you collect via pop3, SBS pop3 not
recommended, 3rd party better.
Have I missed something...;-) can you elaborate a bit more... ;-)
Technically, if ISP supports it can configure MX and A records to send
email to ISP via SMTP this then hops over to your server but is
additional configuration for something uneccessary. If trying to utilise
ISP spam / virus capabilities then this would usually be available for
pop3.
