I have absolutely no idea what this means though.

In Server Management, Advanced, Exchange, Server, Protocols, SMTP, Open the
properties of the default SMTP server, check the box that enables logging.
The defaults should be okay.

If not turn it on and wait for a few minutes for the log file to be created
If so go to C:\windows\system32\logfiles\SMTPSVC1

This may give you some insight into what is happening

I have no idea what's wrong as Exchange checks our POP3 accounts just fine
and we can send mail using standard Outlook setup as well.
