I think what you are referring to is simply the time of day/night your WSUS
server looks out to Microsoft for any new updates that have been made
available from Microsoft. This is not going to effect your laptops getting
the updates. When they connect to the SBS network the following morning
they will look at your WSUS for updates and soon after (if there are any
that need installed) will show the yellow update icon in the system tray
indicating updates are available.

I did everything through the SBS Server Management console. I clicked
on the Update Services tab, then chose "Synchronize Now" to set up for
the first time. Now I see the list of updates and the schedule. They
are all scheduled to occur at 3:00AM, but I know most of our users
will have their laptops off.

This depends upon the Windows Update Policy configurations. How did you
"enable" Update Servcies, with the integrated SBS R2 install, or a manual
Installation of WSUS 2.0?
Usually, computers that are not running at the scheduled install time
will
have the updates that have been approved and downloaded shortly after
they
start up (5 min?). This can vary with GPO settings.
