If you have already installed with .local you can't change it without a reinstall. MAC's don't like .local so .lan or .office is preferred. There are workarounds but if the box is not in production yet a flatten and reinstall might be good.

Thanks. I am not familiar with Entourage but I will look into it..
Also, why would changing the internal domain help?
Finally, I have never used anything but Symantec, which I am not thrilled
with either, but not sure what to buy from Trend Micro as it is out of my
comfort zone. I will check out the CSM for SMB. Does this cover AV, client
security and Anti-Spam?

Get Entourage on the Mac for e-mail and they'll have a more, er,
"Outlook-like" experience.
When you set up the server, don't use a .local domain name internally - use
something else, like .lan or internal.realdomain.com. You may need to play
with SMB signing stuff on the server; I haven't done this for a while so I
don't remember for sure.
Macs don't need antivirus software, but your server does....make sure you've
got good Exchange-aware AV on there. I am not a fan of Symantec products in
general and their Exchange stuff is not widely adored amongst Exchange
people....I personally use Trend Micro software on all my networks (for SBS,
I use the "CSM for SMB" suite).
