Have you rebooted since extending the partition? I'd start with that.
Mind you, 25Gb for the C: partition on SBS is plenty. Ideally, you move
all the data off C: to other partitions - Sharepoint, Exchange, Users
folders, etc. - and keep C: just for the SBS OS components. There are a
number of logistical reasons for doing this, most of which are not vital,
but there is one key reason for doing so - Windows does not like to run
out of space on the OS partition, and moving all the "growable" data off
helps to avoid that scenario.
1. Complete System backup
2. Ghost Copy
3. Delete partition and startover.
Any better solution is greatly appreciated. I don't even mind using
both SATA drives as RAID 0 and using a software RAID. I don't have
much experience with RAID so that is probably my main weakness in this
problem.
RAID0 is an absolute no-no on a server.

Thank you all for the responses. I have rebooted the server since
extending with no luck. From what I am understanding is I should have
one partition for the OS (20-30 GB) and the 2nd partition for the
rest. I think I now know where I my problem began.
