There is an easier way to set up "My Documents" redirection. Just open
'Server Management', go to 'Users' and on the right pane, click on
'Configure My Documents' redirection.
If you want to use GP, click on 'Group Policy Management', 'Forest',
'Domains', <yourdomain> and right click on 'Default Domain Policy' and
select 'Edit'
Under 'User Configuration', 'Windows Settings' you'll see the folder 'Folder
Redirection'

I want to have the "My Documents" folder to automatically point to a

drive (say it is H:) rather than the typical c:\My Documents. I am using
Windows Small Business Server SBS 2003. I have seen it documented to use
GPEDIT.MSC and then under the "User Configuration", Window Settings" you
select "Folder Redirection" and set the values you want. When I use
GPEDIT.MSC and then go to "User COnfiguration" and "Window Settings", I
don't
see "Folder Redirection". How do you accomplish folder redirection using
Group Policy Editor with SBS 2003?
