I have installed SP1 on our SBS server successfully, thanks to a
guide at smallbizserver.net. Does anyone have a guide/tips for
installing SP1 on our Windows 2003 Terminal Services application
server? I have downloaded the exe from the Microsoft website.

Just run/install it; it should be fine as far as I've seen. Of course, you
will have made a good backup first. :)
However, as this isn't an SBS issue, you might want to post TS-specific
questions in m.p.windows.terminal_services for more expert help.
