Thanks for posting here.
From the description, I understand the issue is that SBS R2 just hangs atrandom times and becomes unresponsive, and you are not sure if it is
related to Symantec Corp 10.1. If I am off base, please don't hesitate to
let me know.
Please understand that it's always difficult for us to troubleshoot such
performance issue, we may need memory dump and interactive troubleshoot
process, that can not be handled in newsgroup. It is recommended that you
contact CSS support, since there could have more interactive troubleshoot
process with Microsoft Support professional and even have remote
assistance. Due to support nature of newsgroup, it is not convenient to be
done here. Please be advised that contacting phone support will be a
charged call.

What is more, I would like to provide some general information to your
issue:
I.Let us refer to the following steps to troubleshoot the issue:
To isolate the issue, I suggest that you temporarily disconnect the SBS
server from the internet and perform a clean boot on the server. A Clean
Boot will allow us to isolate any device drivers or programs that are
loading at startup that may be causing a conflict with other device drivers
or programs that are installed in your computer.
You may run the following steps to perform clean boot:
a. Click Start, and then click Run.
b. In the Open text box, type MSCONFIG then click OK.
c. On the System Configuration Utility window, click the Startup tab and
click the "Disable All" button to remove the checkmarks from each line in
the list.
d. Then, click the Services tab, add a checkmark to the "Hide All Microsoft
Services" item then click "Disable All".
Note: This disables all third party service items.
e. Click the OK button and restart your computer. Please ensure that all
the third party related services are stopped (services.msc) on the SBS
server.
f. Then please monitor the server to see if it helps.
If the server work fine, The issue should be related to Symantec Corp 10.1
or other the third party software, you can also contact Symantec for
assistance
II.If issue persist, Please collect the following information for analysis:
1.when did you install Symantec Corp 10.1, before the issue occurred or not.
2.what have you done on the server before the issue occurred?
3.you installed R2 just yesterday , Have you installed SP1 and latest
security updates on the server?
