SBS also does not make the best platform on which to run any virtual
environment, if there is an alternative I'd strongly suggest using it.
VMPlayer only needs a workstation.
I'd be a lot more comfortable using some seriously heiney kickin x64
box
with >4GB RAM and running SBS in the virtual environment than virtual
under SBS.

Yes, it installs. It likes a lot of RAM, and it is not a best practice
because of security concerns, but it works.

I have only a single server and would like to put VMWare or
Microsoft's VPC Server on there and try to do a full restore inside
the virtual machine for practice. Is this viable? What options do I
have?

Why not put VPC on a Workstaion and test your restore from there?
That's how I usually do my backup verifications and DR test.
