Alternate, generic company e-mail address

My customer wants to give all users the ability to use an alternate
e-mail address in the From field.
Specifically, users should be able to choose to send from
"mailroom@domain" instead of their usual e-mail address.
Can this be done and how would it be setup?
It should be noted that:
a) All incoming mail currently comes through POP3 mailboxes. This is
to ensure e-mails are not bounced when the internet connection to the
server is not available, and;
b) There is a POP3 mailbox called "mailroom" which is collected and
routed to one of the SBS users.

p.s. I've had all the lectures on giving up POP3 mailboxes, and its on
our list of things to do when we have setup a faster, more reliable
internet connection.
