It's possible, but I'd want a VERY good reason to justify the effort.
Changing names will break Outlook MAPI config, mapped drives, share
definitions stored anywhere in any client software, client connections
to SBS shared printers, FWC/proxy configurations by server name, and
probably scores of other things. About the only thing not broken by
this on the clients will be domain membership/group policy/other
AD/Kerberos stuff.

That said, probably the cleanest way would be a swing migration back
onto the same hardware. Essentially: Make really sure your starting AD
is clean and DC services are working correctly on SBS. Backup your ISA
configuration to files. Backup your DHCP server configuration (or
whole db) to file. Make online and offline backups of Sharepoint data.

Build new Win2k3 Svr box and join to domain, install DNS service,
dcpromo up, designate as GC server, ensure FRS replication and GC
advertisement, install and synch WINS with original server (optional),
disconnect from LAN. This is now a container for your AD and will
become the transfer "agent" to get this AD on a fresh install of SBS on
your original equipment.

Make really sure the temp DC is disconnected! On the temp server,
seize all ADS roles (pdc, schema master, etc.). Use ntdsutil and
adsiedit to remove any traces of Exchange and original server from AD;
do the same to remove any remaining traces of original server from DNS.
Shut down original server and remove system drive(s)...so you have
some fallback position.

Install new drive(s) and install SBS2k3 to the point that basic
Win2k3Svr install is finished...(after that reboot) stop the resumption
of the SBS component setup. Make sure this installation names the
machine your desired SBS name and configure the network connections
that same as original. Connect the temp server and this one via
cross-over cable, stop and disable the firewall service on both, join
the temp server's domain (same domain name as original server). On
"improved" SBS machine, install DNS service, dcpromo up, designate as
GC, ensure FRS replication and GC advert, install and sync WINS
(optional), disconnect from crossover cable. Seize all ADS roles, use
ntdsutil, adsiedit and DNS snap-in to remove any traces of temp DC
(sound familiar?).

Finish SBS installation on this box. Run CEICW but don't physically
connect it to anything but hubs/switches that aren't connected to
anything else. Unmount the Exchange stores and set them to allow
overwrite from backup. Run LegacyDN Exchange tools to change the
legacydn attributes on the Exchange installation to match the original
server's name. Do an offline restore of your original Exchange stores
to new installation. Mount Exchange stores. Migrate data, server
shares and printer definitions any way you like. Import ISA setting
from backup files. Import DHCP server config or database. Restore
your Sharepoint data via favored method. Retweak everything you ever
tweaked on your original installation. Fix all the resultant
misconfiguration problems for every machine and every user.

That's the quick and super dirty version. See the problem? It's
doable AND it's a total f*ckin' mess.
