SBS 2k3 and Exchange 2k7

I am looking to overlay Exchange 2k7 onto an new SBS 2k2 R2 build, has
anyone done this? I have not set up either yet, so I think I can
install SBS without installing Exchange 2k3, then install E2k7. I
have done several dozen SBS installs, but all have been full installs,
so I can't remember off the top of my head if the option is there to
NOT install E2k3 or not. I wonder what functionality I would loose
doing this. I need E2k7 installed so I can learn the new
functionality. I would say this would be a test build, but it is for
inhouse and I prefer to use my in house operations for my test builds
(2-3 employees, so I am not worried about issues and problems), we have
a back up system ready to go if we think we will be down for more than
an hour. I don't have the time to test and run my business, so I
prefer to use my business as a test, giving me more real life usage and
experience. I have just ordered the new server and it is all 64 bit to
allow for Exchange 2k7. Does anyone have any thoughts or have they
done this yet?
