One of the things you will lose is Windows Update, but since there will
surely be no attacks rendered while you are off the inet, is won't matter.
And that's a good thing. :-)
Be prepared when you come back to install a ton of updates, including your
anti virus, your anti spam, windows updates. I would probably disable
exchange until all of the above was done. I might even power off the
clients until all the updates had been received, the server restarted. Then
WSUS the clients one at a time.

At a guess, I would say don't touch anything. As far as the system is
concerned, the Internet connection will be broken. If you are using the
router for DHCP, then clearly you will need to enable it on the SBS. Do
that first, having disabled the router DHCP, and make sure you have it
all working normally, then just remove the router.
Please let us know what, if anything, breaks. Certainly a short loss
of Internet is an entirely normal thing, but over a long period we
may learn something.
