I have rented a remote server: Windows 2003 Small Business Server and
am logging on via Remote Desktop to do the initial configuration.

I have realised that the default domain that the hosting company have
allocated this server is not suitable for my requirements - can I
rename the domain?

No - to change the server name or AD domain name you'd need to totally
reinstall. I'm presuming this is a server dedicated to your own use, right?
Why are they installing it for you, then?
