An Excellent open source windows mail server www.hmailserver.com (also add Clamav for virus scanning)
Open source spam filter: ASSP Anti Spam Proxy http://assp.sourceforge.net
It will take a bit to get going, but is a very good solution (IMO)
One more note: I would put this mail server in a DMZ.
inbound
somedomain mail server---->ASSP---->hmailserver----->exchange
out bound
exchange---->ASSP---->hmailserver----->somedomain mail server
This config will build a white list from user sent emails. That way address on the white list will not be checked for spam. (if that is what you want)
