Using different email addresses in exchange/sbs 2003 R2

Hi,

I have a number of small businesses with different email addresses. They are stored at different pop mailboxes at my ISP. I can collect the email using exchange and route it correctly but there are 2 things i dont seem to be able to do.

1) when sending out a new email, I don't seem to be able to change the reply address "on the fly". When using a standard email client (without exchange), if you have more than one account, you can specify which identity you are emailing out on at the time of writing the email. is this possible with exchange?

2) When replying to an email, again the outgoing mail has my default email address, rather than intelligently using the email address it came in on (or at least the domain).
