Thank you for posting in SBS newsgroup.

From your problem description, do you mean you have connected to a
workstation through remote desktop from another workstation, however, you
can not find the local printer from the remote desktop?

To narrow down the problem, would you please help me collect the following
information?

1. Are you connecting to the workstation directly via Remote Desktop
Connection located on Accessories | Communications or via RWW?
2. You said "Other clients connecting to the workstation can use their
local printers as default, but they were also initially configured to do
so", do you mean it works if you initially select to use Local Printer on
Local Resources tab when you click Options on Remote Desktop Connection?
3. You said "If I try to rebuild a connection from any of those that do
work, I get the same problem", do you mean the initial connection settings
override the new configuration on the Remote Desktop Connection?
4. Are you connecting to the workstation from internal clients of SBS or
remote client?
