I would like to be able to extract some key
files (eg accounting program/customer database) very rapidly onto a
temporary (XP pro) machine to keep the business running whilst a full
replacement server is acquired and the software reinstalled
(presumably followed by a swing transfer, but that's a question for
later).
You should be able to do a restore from your backups, if they are truly full
backups of everything. But yes, that's for later.
Without installing the full SBS2003 on a 'mule', what
software can I use on an XP machine to extract these files? Do I
need to extract files from the SBS2003 disk, if so which, or will the
native restore back-up programs on XP work?

Getting the raw files out of your backup shouldn't be that big a deal, as
the built-in NTBackup in Windows XP ought to be able to read a .bkf file or
tape backup made in W2003, and you ought to be able to do a selective
restore of the files you wish - but if this is a database program, that may
be another story. Much depends on that, I'm afraid.
