Three quick and easy ideas:
On your SBS, open the Group Policy Management Console from the admin tools
menu. Click Help, which contains very good information to get you started.
Go to the TechNet home page and search "group policy management."
http://technet.microsoft.com/en-us/default.aspx
If you're interested in using group policy with Office, you'll need to add
the ADM templates for group policy from the Office Resource Kit. See
"Office 2003 Service Pack 2 Administrative Template (ADM), OPAs, and Explain
Text Update"
http://www.microsoft.com/downloads/details.aspx?FamilyId=BA8BC720-EDC2-479B-B115-5ABB70B3F490&displaylang=en
If you have specific questions after looking at those, please post back.
